Remark: use a fresh egg in order for the poached egg to come out perfectly
Recipe:
- Prepare the avocado spread: Open and peel the avocado. Mash it with salt and a squeeze of lime juice. Set aside.
- Toast the bread: Heat some olive oil in a pan on medium heat. Toast the bread until golden on one side, then flip and toast the other side.
- Poach the egg: Boil water and add 3 tablespoons of vinegar. Once the water is slightly boiling, stir to create a whirlpool. Gently drop in the egg and let it cook for about 4 minutes.
- Assemble the toast: Spread the avocado mash on the toasted bread. Add slices of smoked salmon, and carefully place the poached egg on top.
- Season and serve: Sprinkle with salt, pepper, and a drizzle of olive oil. Enjoy your fancy avocado toast!
