Recipe:

  1. Prepare the vegetables: Start by cutting the peppers into long thin slices. Peel the onion and cut it into eight pieces.
  2. Make the guacamole: Clean the avocado by peeling the skin. Add lime, a generous amount of salt, and mix everything to form a smooth texture.
  3. Prepare the chicken: You can use any type of chicken, but chicken thighs without bones work well. Cut the chicken into long, thin slices.
  4. Sauté the vegetables: Turn on the stove to high heat, add some oil, and wait until the pan becomes really hot. Add the vegetables, sprinkle with salt, close the lid, and let them cook for about 18 minutes.
  5. Add spices to vegetables: 5 minutes before the vegetables are done (around 13 minutes in), add half an envelope of fajita spices, drizzle a little more oil, and mix everything together.
  6. Cook the chicken: Turn the stove back to high heat, add enough oil, and wait until it starts to boil. Add the sliced chicken. If you have a lot of chicken, cook it in two rounds to ensure even cooking.
  7. Flip and season the chicken: When the chicken forms a nice orange crust, flip it over. 5 minutes before the chicken is done, add the other half of the spice envelope.
  8. Assemble the fajitas: Warm up the tortillas, then add the vegetables, chicken, and guacamole. Wrap the fajita and it’s ready to eat.
