Recipe:
- Prepare the potatoes: Start by peeling the potatoes and cutting them into long, even slices. Wash them under water at least three times to remove excess starch, ensuring they are completely clean.
- Heat the oil: Before peeling and cutting, pour enough sunflower or peanut oil into a pot to cover the potatoes fully. Turn the stove to medium heat.
- Dry the potatoes: Make sure the potato slices are completely dry before frying, as moisture can cause dangerous oil splashes.
- Test the oil: To check if the oil is ready, insert a wooden ladle into the oil. If small bubbles form around it, the oil is hot enough. Alternatively, you can test by adding one fry and checking if it starts to fry correctly.
- First fry: Gently place the fries into the oil, stirring carefully to avoid breaking them. Fry them for about 15 minutes.
- Double fry for extra crunch: Remove the fries after the first fry, turn the stove to high heat, and allow the oil to get hotter. Fry the potatoes again for another 8 minutes to get a crunchy texture.
- Final steps: Once the fries turn golden, remove them from the oil. Sprinkle with salt and pepper, and they’re ready to enjoy!
