Recipe:

  1. Cook the pasta: Boil water, add salt, and cook the pasta according to package instructions. Save some pasta water for later.
  2. Prepare the garlic and oil: While the pasta is cooking, heat olive oil in a pan over medium heat. Add the thinly sliced garlic, chili flakes, and chopped parsley (including stems if available). Cook until the garlic turns golden.
  3. Deglaze with wine (optional): Add a splash of white wine to the pan and increase the heat, allowing the mixture to simmer and combine flavors.
  4. Mix the pasta: Once the garlic is golden, add a bit of the reserved pasta water to the pan and stir. Drain the pasta one minute before it’s fully cooked and add it to the pan. Toss everything together for another minute.
  5. Finish with more oil and parsley: Drizzle more olive oil over the pasta and garnish with additional fresh parsley.
