Prepare the pancetta: Cut the pancetta or speck into small pieces. You can also buy it pre-cubed from the supermarket.

Sauté the pancetta: In a pan, add some olive oil, onion cream, and the previously cut pancetta. Let it cook for 5 minutes.

Add seasoning: Add salt, pepper, and the peas. The peas will cook for a total of 17 minutes.

Deglaze with wine: After 5 minutes of cooking, add any type of wine or alcohol and let it evaporate.

Simmer the peas: 10 minutes from the start, add some boiling water. Cover the pan almost completely with the lid and reduce the heat to low.

Check the water: If the water evaporates completely, add a bit more to keep the peas simmering.

Add butter and seasoning: 15 minutes from the start, add some butter mixed with flour, along with more salt, pepper, and parsley.

Finish cooking: After 17 minutes of cooking, your dish is ready.
