Recipe:

  1. Prepare the pasta water: Begin by adding water to a pot and bringing it to a boil for the pasta.

  2. Sauté garlic: In a separate pan, heat some olive oil over medium heat. Add the sliced garlic and sauté until it turns golden.

  3. Add anchovies and other ingredients: If using, add the anchovies to the pan along with capers and olives. If you like heat, sprinkle in some red chili flakes. Stir everything together.

  4. Deglaze with wine: After a minute, pour in half a glass of white wine and let it evaporate for about a minute.

  5. Add tomato sauce: Next, add the tomato sauce to the pan. Reduce the heat to low and let it simmer. Stir occasionally to prevent sticking, and check the pasta cooking to ensure it’s al dente.

  6. Check the sauce consistency: Cook the sauce until it thickens and is not too liquidy. It should have a nice texture, as shown in the video.

  7. Combine pasta and sauce: Once the pasta is cooked, drain it and add it directly to the pan with the sauce. Toss everything together to combine.

  8. Finish with cheese and herbs: Turn off the heat and add grated Parmesan cheese, stirring until it’s well mixed. Then, drizzle with olive oil and sprinkle with chopped parsley.

  9. Serve: Plate the pasta and enjoy your delicious Puttanesca!
