Recipe:

  1. Prepare the ingredients: Start by peeling and slicing an onion and two cloves of garlic.

  2. Cook the base: Heat a pan on medium heat and add some olive oil. Immediately add the sliced onion, garlic, a pinch of salt, and some pepper. Stir everything together and cook until the onion turns a golden brown color.

  3. Add the tomatoes: Once the onions are golden, add the can of tomatoes to the pan. If you have baking soda, add a pinch to reduce the acidity of the tomatoes. If not, add a bit of sugar to balance the flavor. Start gently squeezing the tomatoes, but don’t worry too much about consistency as you’ll be blending them later.

  4. Simmer: Lower the heat and let the sauce cook for about 20 minutes.

  5. Blend: After 20 minutes, turn off the stove and blend the sauce until it’s smooth, with no visible pieces of tomato or garlic.

  6. Store and use: This tomato sauce is versatile and can be used in various dishes such as pasta, pizza, or with meatballs. Store it in the refrigerator and reheat it in a pan whenever you need it throughout the week.
